1C red onions, chopped
1 poblano pepper, seeded and chopped
2 garlic cloves, minced
2 lbs ground turkey (or chicken)
2T tomato paste
1T Goya Adobo seasoning
1T chili powder
2C low-sodium chicken broth
14.5 oz can fire-roasted tomatoes
14.5 oz can cannellini beans
Garnish: sour cream, cilantro sprigs, fresh lime
1. Add a swirl of olive oil to a large pot. Preheat on medium-high. Add your onions, poblano pepper, garlic and turkey. Saute for about 10 minutes until onions are soft and turkey is no longer pink.
2. Add tomato paste, oregano, adobo, chili powder, tomatoes, cannellini beans and chicken broth. Simmer for about 15 minutes.
3. Top with sour cream, cilantro and fresh lime.
